Tobin will take up the position at the Greece and Cyprus specialist operator on February 27.
Chief executive George Michalias is to stay on in his role at Olympic and "at the appropriate time will look to take a non-executive board role,” the operator said in a statement.
Tobin will be charged with overseeing Olympics’ commercial, operational and marketing activities and will also sit on the company’s board of directors.
She has previously spent 17 years in senior board positions at Tui and First Choice.
